Cream of vegetable soup with ham and black truffle
Ingredients for 4 persons
– 1 Zucchini
– 1 potato
– 1 onion
– 50 g soft cheese
– 75 g diced ham
– 150 g white Shimeji mushroom
– 12 g black truffle Tuber melanosporum
– Extra Virgin Olive Oil with black truffle
Boil the vegetables with some salt. After 30 minutes, when they are cooked, add the cheese and a dash of olive oil and mash. Finally, fry the mushrooms and ham separately. Serve with a drizzle of truffle oil and grate a little black truffle just before serving. Enjoy!
