A typical village recipe that we have allowed ourselves the license to give it a truffled touch, which is never a bad thing.
Truffled broad beans with ham
Ingredients for 4 persons
– 1 onion
– 1 garlic
– 1 tablespoon of aniseed
– Some mint leaves
– 600 g of broad beans
– 200 g of ham cubes
– 12 g of black truffle Tuber melanosporum
– Truffled extra virgin olive oil
– Salt
Preparation
Start by frying the chopped onion and garlic clove in olive oil in a saucepan. When they are golden brown, add the diced ham. After a few minutes, add the broad beans, a spoonful of aniseed and some mint leaves. When the alcohol has evaporated, add half a glass of water and a little salt. Simmer until the beans are tender. Finally, serve and grate fresh truffle on top just before eating. Our truffled broad beans are ready!
Approximate preparation time: 20 minutes.
Remember that if you have to clean the fresh truffles because you have them with a thin layer of soil, you will need a truffle brush.
