Ingredients for a starter for 4 persons

– 100 g of veal Carpaccio
– 25 g of Parmigiano Reggiano
Extra Virgin Olive Oil with black truffle Tuber melanosporum
Guérande Grey Salt with black truffle Tuber melanosporum
– 2 teaspoons of Melanosporum pearls
– Basil

Preparation

Very simple. Leave the carpaccio spread out on a plate with a trickle of truffled olive oil and a pinch of grey salt to macerate for one hour in the refrigerator. After this time, the carpaccio will have absorbed part of the aroma of the black truffle. Spread the carpaccio and place a few slices of parmigiano reggiano on top. Garnish this aromatic starter with a few basil leaves. Then sprinkle a few drops of our truffle oil and a pinch of Guérande gray salt to taste.
